Oliver has been with Jumeirah Etihad Towers in Abu Dhabi since June 2011, starting as Pre- Opening Executive Sous Chef and was promoted to Executive Chef in May 2016.

Prior to that, Oliver spent four years in New Zealand as Executive Chef of the Pegasus Bay Restaurant, winning the New Zealand Top Restaurant Award for 2008, 2009 and 2010.

For the previous decade, Oliver worked in Sydney’s top restaurants - Icebergs Dining Room and Bar, MG Garage and The International and spent one year working in Manhattan in New York, at the Chanterelle Restaurant.

Having been based in Abu Dhabi for the past five years, Oliver enjoys working with a very multi-cultural team, producing the top dining destination in Abu Dhabi.
